riffing on an already improvised recipe

Waking up to the pitter-patter of raindrops on my window, slowly getting out of bed, looking out to see the dark day – I knew this was a day for muffins.

What kind of muffins was the question. Looking in the fridge and cupboards, I saw I had the makings of something interesting. I did a quick search and found something close to what I wanted to make. Something with beets, apples, olive oil, and maple syrup. Something dairy- and egg-free, which is something I haven’t yet dared to attempt.

I found a recipe that was an improvised version of another recipe, and I improvised on that using local and/or organic ingredients. I like to try new things in the kitchen with whatever I have available, and I’m usually pretty lucky with the results. Here’s the recipe I concocted, based on this one here.

Improvised beet-apple-orange muffins

  • 1 1/2 cups flour
    (I used 1/2 cup spelt & 1 cup half white bread flour, both organic Farmer Ground Flour from NY State)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • pinch of mace
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup
  • 1/2 cup olive oil
  • 1/2 cup hemp milk
    (you could use almond or soy)
  • zest of 2 oranges
  • 1 cup shredded apple
  • 1 cup roasted shredded beets
  • juice of half an orange
  • cashew pieces

Mix dry ingredients, except for sugar. In a separate bowl, mix wet ingredients plus sugar. Combine dry and wet ingredients, just coating the dry ones (don’t overmix). Fill a greased or lined muffin tin. Drop some cashew pieces on top for some extra flavor and crunch.

Bake at 350 degrees for about 15 to 20 minutes (my oven took 20 minutes).

sun in bloom eco-eatery

I just came from Sun In Bloom, my friend Aimee’s new holistic eco-eatery on the border of Park Slope and Prospect Heights, where I had a delicious live vegan burrito made with sunflower seeds, yummy spices, cabbage, avocado, and more goodness packed in to a sprouted grain wrap (or you can go all veg with a cabbage wrap). I’m amazed at what she’s put together in just 3 short months in the old Organic Heights location on Bergen Street.

The menu is an all-day feast of breakfast-inspired treats and sandwiches, wraps & salads – like the burrito I had. Plus on the weekends there are items like do-it-yourself gluten-free pancakes and other brunchy tasties. Not to mention the delicious desserts, all vegan, some gluten-free (I hear the cashew-based cheesecake is divine). Oh yeah, and it’s all organic and/or locally sourced.

In an ecocity, residents live a good life while using minimal natural resources. Buildings make best use of sun, wind and rainfall. Natural habitat corridors foster biodiversity and give residents access to nature. Food and other goods are sourced from within the bioregion. Most residents walk or cycle to work, and take public transportation when they need to travel further. Car-sharing allows people to use a car only when needed. The labor-intensive economy maintains full employment and minimizes energy and water inputs. Goods are designed for reuse, remanufacture, and recycling; and production is designed to reuse by-products and minimize transport.

Ecocities will be exciting and rewarding places to live, communities that will foster humanity’s creative and compassionate evolution on a healthy Earth.

Richard Register believes we can build them and he thinks we already know how.

**Richard Register** is founder of Ecocity Builders and author of “Ecocities – Rebuilding Cities in Balance with Nature.” For more than thirty years he has been initiating local projects, pushing establishment buttons and working with environmentalists and developers. He travels incessantly and has circled the planet dozens of times speaking about ecological design, but it’s been a decade since Register visited New York.

This past weekend, I participated in Urban Wilderness Action Day, part of Eyebeam’s ElectroSmog Festival. My friend Kris & her hubby Pascal put together this little video recapping my role in the day.

urban wilderness action day – this saturday!

It’s been quiet on this little blog for the last couple of weeks. I’ve been hard at work on a project. An urban wilderness intervention project to be exact. It all goes down this Saturday, March 20, at 1pm at Eyebeam (540 W 21st St). And I won’t be the only one staging a public intervention. Curious? Come check it out! Details below:

You are invited to join the Urban Wilderness Action Center for a day of action where people from NYC, Berlin, Amsterdam and London will design and disseminate projects around the theme of “urban wilderness.”
UWAC DAY is Saturday, March 20. Each of four lead cities will host a day of free artist-led interventions that respond to urban wilderness. We will document the day through a live Twitter, Flickr, and video feed streamed through the UWAC website.

1–6PM EST, NYC:
Join us at Eyebeam for a series of FREE and open to the public events:

  • Eyebeam Student Residents Caroline Spivack, Jade Highleyman, Luther Cherry, Spencer Brown, and Zoe Penina Baker are working with artists Doris Cacoilo and Sonali Sridhar and gardener / window farmer Maya Nayak to workshop a guerrilla gardening andventure. Participants on UWAC Day will craft and distribute their own plant-based urban intervention.
  • Tattfoo Tan (artist) will be onsite at Eyebeam collecting pledges for environmental stewardship, and teaching people the basics of urban friendly, worm-based composting. Free worms!
  • Matthew Slaats (artist) will be at Eyebeam signing up participants to join Freespace, an initiative which will be made up of are forgotten spaces, private spaces, lost spaces. People are invited to go out and find and reclaim a space, or donate a space they control in some way for a period of time.
  • Boswyck Farms will be demonstrating hydroponic systems, and introducing their new Mobile Guerrilla Kitchen.
  • Liz Neves (that’s me!) will invite participants to re-establish wilderness in NYC by recreating a lost world where beavers dammed and turtles swam in flowing streams, and foxes frollicked under towering trees.
  • Safari 7 will invite participants to embark on a self-guided tour of urban wildlife along the No. 7 Subway line.  Listen in, grab a map, and go!
  • Jay Weichun (filmmaker/artist) will be onsite from 2-6PM making flower bombs. Using a simple mixture of regional wildflower seeds, soil and clay, flower bombs are a fun way to spread color and life to places of neglect. Participants are invited to make their own flower bombs and form their own flower bombing collectives!

big river, big dead zone

What happens when loads of nitrogen from chemical fertilizers get washed from commodity crop farms down the Mississippi and into the Gulf of Mexico? A big fat dead zone is what happens. A dead zone roughly the size of my home state, New Jersey, where no marine life can live because of decomposing algae that suck the oxygen from the water.

You may have already heard about this problem, but now there’s a film. From the guys who brought us King Corn, comes Big River. Catch a snippet below, come to a screening on March 15th, or host your own.
